Easy White Chicken Chili


Easy White Chicken Chili




2 cups rotisserie chicken
3 cans cannellini beans
1 can black beans
1 1/2 cups salsa verse
4 cups chicken stock
3T cumin
1t oregano
1 diced onion
2T minced garlic
1 can coconut milk

Saute diced onion in olive oil until tender (about 5 minutes).  Add garlic,  and spices.  Toast till fragrant (about a minute).  Add chicken, beans, stock, and salsa verde and coconut milk.  Simmer 15 minutes.  Serve with avocado,  cheese, cilantro and chips.
